Café David Granola

I’ve been nuts about granola these days, but, boy, even an average one could cost a fortune! Moreover, it was impossible to find one that came with the right combination of nuts or dry fruits. Café Fanny Organic Granola came very close, but still not quite. Plus, it was pretty expensive, too.
Then one day, David said, “You know, we can make our own granola just the way we like it.”
Could something this good be true? So I asked the dumb question, “Really!?”
He said, “Sure! It’s pretty easy. Let’s go shop for all the ingredients we like.”
Voilà! Now every Friday morning, David would make a batch of granola for the following week, and Amanda has been having the best granola that she could find — Café David Granola!

3-4 cups raw rolled oats.
1/2 cup raw sunflower seeds.
1/2 cup raw almond slices.
1/2 to 1 teaspoon ground cinnamon.
Pinch of salt.
Equal parts maple syrup and honey to taste (around 1/2 cup total).
2/3 cup dried fruit (in the picture above it is half raisins half chopped dates).
2 tablespoons roasted sesame seeds.
2 tablespoons roasted flax seeds.
Pre-heat oven to 350 degrees Fahrenheit.
Combine oats, nuts, cinnamon, salt, honey and maple syrup in a bowl. Mix well.
Spread mixture onto an un-greased half sheet pan.
Bake until brown, approximately 30 minutes. Stir occasionally (every 5 to 7 minutes) to ensure even browning.
After it is browned, remove from oven and add the rest of the ingredients.
Cool on wire rack before storing.
